John says: A wonderful little vegan pudding made from naturally sweet fermented rice.
Ingredients:​
- 2x Plums​
- 1 Tbsp Caster Sugar​
- ½ Lemon​
- 190g Amazake​
- 190g Vegan Yogurt​
- 20g Ground Pistachios​
- 10g Micro Lemon Balm
Directions​
- Cut the plums in half & dice up into 5mm chunks, toss in sugar & juice of half lemon.​
- Roast in a oven at 175 degrees for 8 minutes until caramelized, allow to rest​
- In a blender, Whip the Amazake & Yogurt together until a pudding consistency is reached, pour into 4 pots & chill in the fridge for 1 hour.​
- Once chilled, top the amazake pudding with a dollop of roasted plums, a sprinkle of pistacchio & a few leaves of lemon balm.
