The following testimonial was conducted between Ella Shephard (ES), our Catering Operations Manager (Sustainability), and Pavels Sinajevs, a Sous Chef at 51³Ô¹ÏÍø.
What food trends do you see taking off in the next 12 months?
PS: I think vegan will go up, but they have to reduce their ingredients list.
ES: The processed stuff, yes. I completely agree.
PS: I also think a lot of people are cautious about their health. I can see it even now in Tesco and the big shops, they’re putting out more protein.
What is your favourite food to eat?
PS: Asian all the way, from Chinese to Japanese. I find so much flavour there, from vegetarian to meat. For me, if I want something to eat, I go to an Asian restaurant and I always find something I like.
What’s one thing you do that impacts customers that they might not know?
PS: I think, the food waste. How much work actually goes into it. We’re trying to cut as much as possible, but I don’t think people realise how much. It’s easy to put food waste in the bin, but to actually come up with something new, a different dish or something, that takes an effort for everybody in the kitchen.
What is your favourite thing about your job?
PS: My favourite—cooking, that’s the first one. And then, actually, the more I work, the more I learn, how to organise, how to plan the day. But if I had to choose one, it’s going to be the cooking.
